Tunisians are characterized for their interest and their determination to maintain food traditions their habits especially in the holy month of Ramadan, the dessert “Zalabiya and Makhareq” are the most famous on the tables of Tunisian families for their originality and it is made of wheat flour and flavoring then placed in hot oil then mixed with olive oil and it is mostly known in Beja city in northwestern Tunisia
