From all parts of the country, Tunisians visit the city of Testour, north-west of the capital, to buy the distinctive cheese of the Testour, which the ancient Andalusian city is famous for and this type of natural cheese is known for its distinctive taste and valuable nutritional value, especially since it is made of natural products and by skilled farmers who inherited the profession from their parents and grandparents and developed it to modern methods. The city, along with its traditional product, makes a number of other types of Italian and local natural cheeses, characterized by the non-introduction of yeast or flour or even chemicals in the manufacture.
