 The Tunisian sweets table in the holy month of Ramadan cannot be devoid of “Makhareq and Zalabiya” these traditional gold-colored desserts which go back to Andalusia, the Andalusians mastered making them during their settlement in the city of Beja in northwestern Tunisia, Beja residents learned it from them, then it had become common between people from the north to the south, purchasing  “Makhareq and Zalabiya” became a tradition for Tunisians,  “Zalabiya” is known for its circular, interspersed shape with small openings prepared from a mixture of flour, eggs and oil, which is then fried,  and placed in honey which gives it is golden yellow color, “Makhareq” are rectangular shaped and brown, prepared with ghee and flour and also fried with oil and submerged with honey,  unlike any other month of the year “Makhareq and Zalabiya” shops become popular in almost all regions of the country as a result of the high demand on it in this holy month.
