Iraq – Small enterprises to revive the traditional Kurdish food topped by sugar cubes

“Om Saman” is a Kurdish woman who founded her own project for manufacturing Kurdish food and pastries and making rock sugar, where she is keen to revive the traditional Kurdish food such as Kurdish bread and Kurdish cuisine by preparing different types of it. Using sugar cubes is still the most salient way to sweeten the tea. Many people in the region, especially the elderly, prefer sugar cubes to sweeten tea. The desire to use homemade sugar cubes increases as almonds and walnuts are added to it. The process of making the sugar cubes is based on putting an amount of sugar in a pot and placing it on fire, then a certain amount of water is added to be mixed well with different flavors as desired.
